Potato Pumpkin Casserole

Every Thanksgiving I cook a big dinner. Whether we’re having 6 people or 26 people, I go all out. The turkey is a given. Every year. The side dishes however, vary year to year. This year, as a nod to my children and their love of cooking + eating, I wanted to put a twist on the traditional sweet potato casserole. You know the one, with the marshmallows browned up top? The best, right?!

This year I’m changing it up and making it a sweet and savory, instead of just sweet.

I find that a basic russet potato mash will take on any flavor that you marry it with. That’s why I always include mashed potatoes on my fork when I take a bite of meat.

I combined the mashed potatoes with mashed pumpkin and then topped with crushed walnuts and a drizzle of honey. On top, go a few marshmallows crisped to perfection.

We were recently gifted a variety of glass baking and storage dishes from Pyrex. We are obsessed. I used their Made with Love 2 cup measuring cup to make sure I didn’t go overboard with the marshmallows in the Pyrex Easy Grab 1.5 Qt. Loaf Pan.

Potato Pumpkin Casserole
Ingredients
  • 2 potatoes, mashed
  • 3 tbsp butter
  • 1 can pumpkin puree
  • 1 tsp pumpkin spice
  • 1.5 cups mini marshmallows
  • .5 cups walnuts
  • drizzle honey
  • to taste salt and pepper
Instructions
Peel your potatoes, dice into large cubes and place into a pot of cold water. Bring to a rapid boil for about 8-10 min. Pierce with a fork to test for tenderness. Drain and return to the pot. Add the butter and mash. Add mashed potatoes to your baking dish. Spread to make an even bottom layer. On top of mashed potatoes, add 3/4 of the can of pumpkin. Spread evenly and smooth the top. Sprinkle pumpkin pie spice on top of your layer of pumpkin. Add your walnuts and marshmallows to fill and cover the dish. Place the baking dish into the oven on broil for 1 minute or until the marshmallows have browned. Remove from the oven carefully and drizzle with honey. Serve hot and enjoy!
