Rainbow-Sprinkled Irish Coffee

Over the past few years, I have begun to love St. Patrick's Day and the celebrations that surround it.  I am only partially Irish, but I went to college in Boston, which is a city that is incredibly proud of it's Irish roots.

This year, I am getting into the spirit even more so because I just happen to be taking a trip to Ireland AND Scotland in April with a couple of my good friends! This will be the second time that I am visiting both countries, and I could not be more excited.

In honor of my trip, AND the fact that St. Patrick's Day is right around the corner, I made some delicious Irish coffee for this weeks cocktail! It was very easy to make, and didn't even require a trip to the grocery store! Now that's my kind of recipe. Last year, I made a different version of Irish coffee on a ski trip with my friends, and I was excited to try out this now one and compare the two.

Here's what you need: -your favorite hot coffee -Bailey's Irish Cream Liqueur -whipped cream -rainbow sprinkles (optional garnish)

Here's what to do: 1) Brew some of your favorite coffee and once brewed, pour coffee into mugs, leaving a little bit of room at the top of each mug.

2) Measure 1 oz. of Bailey's into each mug.

3) Top each coffee drink with as much whipped cream as you can fit -- go crazy!!

4) Top each drink with rainbow sprinkles.  Enjoy!

Look at how pretty these are! Very yummy, too.

I styled these drinks on our favorite bar cart, and served them up with mini cinnamon buns that I found at Whole Foods.  I placed our Irish coffee mugs on a this white tray from CB2, and lined the tray with this festive metallic shamrock confetti, which I am obsessed with! I used these green paper straws with white polka dots as the finishing touch.
