Very Berry Recipes

These days its all about simple pleasures. A stroll through the park, a mid day cocktail, or receiving a letter from a friend - basically anything to look forward to as we continue our days at home. As the days have started to get warmer around here, something I’ve been looking forward to each week is a stop at my local farmers market.

There is no greater scene for me than a stand full of of fresh fruits and veggies because, as a vegetarian, this makes up most of my diet.

Even before my veggie days, I LOVED fruits but especially berries. I could literally eat them all day long in my smoothies, desserts, breakfast, as a snack, you name it.

So this week before I make my stop I’m planning out a few recipes that I can make that all include fresh berries. Check out my list below!

SPICY RICOTTA & BERRY WONTON CUPS WITH BLACK HONEY

Wontons with berries on top?? I would have never thought of this combo before on my own. I love that this recipe has a crunchy snack aspect as well as fresh ingredients like blackberries and herbs. I’m especially excited to try black honey! I will be on the look out for that the farmers market as well.

Double Berry Firecracker Tart

With July 4th around the corner, I’m excited to make this baby! It’s the perfect side dish to include at your mini bbq this summer. It’s colorful and totally guilt free thanks to all of the fresh ingredients topped onto this pizza.

2 Ingredient Black & Blue Frozen Yogurt

Ice cream is a no brainer when it comes to berries. On a hot day, I think everyone feels the same exact way….. I NEED ICE CREAM. One of my many impulsive buys throughout quarantine was an ice cream maker so I’m always looking for cool new recipes to try.

SMASHED BERRY CROSTINI WITH CINNAMON LABNEH AND FRESH CHIVES

This to me is the perfect side dish for a good Sunday brunch spread. It’s crunchy, sweet, and the perfect weekend treat. One of the things I like the most about this recipe is that is that you can top it with herbs that aren’t traditionally sweet for a nice contrast like chives & basil.

BLACKBERRY MINT MOSCOW MULES

Any recipe list for me wouldn’t be complete without a cocktail. Moscow Mules are a classic but to give it a fun twist, you can top with Blackberries. I also have tons of fresh mint growing in my garden so this one is definitely going on my happy hour list - cheers!
